Paleo Ugly Dip

Ugly Dip has always been one of my favorite dishes to bring to a pot luck or prepare for Super Bowl parties, and I realized today that it's paleo friendly. What a great surprise! I'm making my grocery list right now to buy the ingredients for tomorrow's BBQ.

Ugly dip is a fresh chopped salsa and can be served with any meat, or scooped up with veggies. I used to serve it with tortilla chips, but those days are gone. I'm going to diagonally slice up some carrots for tomorrow's party and use them as spoons to shovel the dip into my face.

Why is it called Ugly Dip, you ask? Well... It's kind of gross looking once you stir it all up in a bowl, but don't let that turn you off! This stuff is so good, I've been known to eat it straight out of the bowl with a giant spoon.

Here's what you do:

4 med tomatoes
2 lg avocados
1 med purple onion
1 bunch of scallions
1 handful of chopped cilantro
2 sm cans chopped black olives
2 sm cans chopped green chilis*
2 tbs olive oil
2-4 tbs balsamic vinegar**
1-2 tbs garlic powder or chopped garlic (to taste)
1 tbs onion powder
Salt & Pepper to taste

Chop all the veggies very small and throw everything into a big bowl. Stir it up and enjoy! If you make it the night before, the garlic and onion flavor will intensify. I have trouble doing this though because I spend the whole night sneaking into the fridge for "just one more bite", and it's all gone by morning.

What else you could do:

  • *Use jalapenos or any other kind of chili depending on your tolerance of heat, or add a bit of hot sauce.
  • **Use whatever kind of vinegar you like. I've made it with apple cider vinegar and balsamic, and both are really good.
  • Chop it as fine or as large as you like. Some days I'm in the mood for a big, chunky salsa, sometimes I want it chopped smaller for easier scoopage.

How to eat it:

  • Serve it over any kind of meat. It's especially good over burgers and chicken breasts.
  • Top an omelet or scrambled eggs with it.
  • Scoop it up with veggie chips (it's a bit chunky, so you'll need something wide enough to hold a mouthful on there.
  • Eat it straight out of the bowl with a big spoon. Try not to growl and drool.

Paleo Chicken with Pineapple Salsa

Pineapple is fresh and plentiful here in Brazil, so I think I'll be using a lot of it in my cooking.

I found a recipe for grilled pineapple salsa from Closet Cooking which looked fantastic, but I haven't been able to find any jalapeños here yet. I'm on the lookout, and hopefully I'll find a source soon. Maybe I can even get my hands on some seeds and grow my own plant (Hahahaha! Have you met my black thumb?).

Anyway, I used her recipe as inspiration and whipped up a really tasty dinner tonight.

Here's what I did:

1 pineapple - chopped fairly small (abacaxi)
1 red onion - chopped fine (cebola vermelho)
1 bunch cilantro - chopped (about a half cup of loose chopped bits) (coentro)
1 lime (limão)
2 lg chicken breasts - cut into 1" pieces (peito de frango)
6 pieces bacon - cut into 1" pieces (bacon)

Spread the chopped pineapple into a baking dish and broil at 250 c (480 f) for about 10 minutes.
Chop the onion and cilantro while it's broiling and place into a bowl.
Throw the bacon and chicken in a pan, cook on med-hi heat until chicken is done. The chicken cooked faster, so I picked it out first and let the bacon finish cooking. Let the bacon finish browning to your desired level of crispy goodness.
Top the chicken with the bacon.
Take the pineapple out of the oven and spoon it into the bowl with the onion and cilantro. I drained the juice out first, but you don't have to.
Squeeze the lime into the pineapple mixture and toss it up.

Top the chicken and bacon with the salsa.

Chow down.

What I would do next time:
Make more! That was so good! Brian gives it his "I could eat that again" approval. He even went back for seconds.

BLC - Warm Paleo Bacon, Cabbage and Tomato salad

I found bacon yesterday in the Brazilian equivalent of Costco. At first I got nervous because the only package I saw weighed about eight pounds, but I found smaller one. Phew!

I wouldn't mind eight pounds of bacon, but it isn't pre-sliced.

Did you know slicing bacon by hand takes muscles? I didn't either, but I do now!

And since I was so excited about the bacon, I wanted to use it for dinner tonight. I happened to have some cabbage in the fridge, along with some tomatoes from the farmers market.

Here's what I used:
Makes 2 servings

6 pc thick sliced bacon (you could use thin sliced and make it more crispy)
1 lg roma tomato
1/3 head cabbage, sliced
1 tsp garlic granules
pepper to taste

Fry up the bacon and drain it on paper towels. Cut into small chunks, or crumble if it's crispy.

Slice the cabbage and arrange on a baking sheet (I lined it with foil because I'm totally lazy about clean up). Drizzle some bacon grease over the cabbage and sprinkle with garlic granules and pepper.

Roast it in the oven at 200 c (About 400 f) until the edges just start to brown. My oven took about 15 minutes.

While that's cooking, chop your tomatoes into chunks.

Throw your cabbage onto two plates and evenly split the bacon and tomatoes on top. That's it! Easy peasy.




I am eating it as we speak and it's quite tasty! I'd call that an easy, light dinner that doesn't take much time at all.

What I'll do different next time:
I'll try different seasonings on the cabbage, and maybe grill some red onions with it too.
